Creamy chicken mixture stuffed into hod dog rolls to make this interesting sandwich.
HAWAIIAN CHICKEN SANDIWCH
Ingredients
1 boneless chicken breast
4 hot dog buns
1 tablespoon chopped garlic
Salt to taste
Crushed black peppercorns to taste
2 teaspoons oil
4 fresh thyme sprigs
1 small green capsicum
1 medium onion
¼ cup mayonnaise
½ cup chopped pineapple
Iceberg lettuce leaves for serving
Method
1. Take chicken breast in a bowl. Add garlic, salt, crushed peppercorns, 1 teaspoon oil, thyme leaves and mix well. Set aside to marinate for 10-15 minutes.
2. Heat remaining oil in a non-stick pan. Place marinated chicken on it and cook till golden from the underside. Flip, cover and cook on low heat for 8-10 minutes. Remove from heat, roughly chop the chicken and cool to room temperature.
3. Deseed and chop capsicum. Finely chop onion and place both the vegetables in a bowl.
4. Add chicken, mayonnaise, pineapple, salt and crushed peppercorns and mix well.
5. Slit hot dog buns vertically without cutting through. Tear some lettuce leaves into small pieces and place in the cavity. Fill the cavity with chicken mixture.
6. Serve immediately.
