Green pea shoots pair phenomenally well with grilled chicken in this recipe.

GRILLED CHICKEN WITH GREEN PEA SHOOTS

Ingredients

1 boneless chicken breast
Green pea shoots for topping
1 tablespoon Worcestershire sauce
Crushed black peppercorns to taste
Salt to taste
1 white onion, skinned
6-7 snow peas, blanched
2 tablespoons olive oil
6-7 shimeji mushrooms, halved
1 tablespoon green pea puree
Pomegranate pearls for topping
Dianthus flower petals for garnishing

Method

1. Preheat oven at 180ºC.
2. Combine chicken breast, Worcestershire sauce, crushed peppercorns and salt in a bowl, mix well and set aside to marinate for 5-10 minutes.
3. Halve white onion. Discard the fiber and open the snow peas.
4. Heat 1 tablespoon olive oil a non-stick grill pan. Place the marinated chicken breast and cook till golden from both sides. Remove from heat and transfer the chicken breast on a baking tray.
5. Place the baking tray in preheated oven and bake for 10-12 minutes. Remove from heat and transfer onto a plate.
6. Heat remaining olive oil in a non-stick pan. Add halved onion and cook for 1-2 minutes. Remove from heat and set aside.
7. Cook snow peas and shimeji mushrooms in the same pan. Add crushed peppercorns and salt and toss to mix. Remove from heat and transfer in another bowl.
8. Put green pea puree on a serving plate and spread it with a butter knife. Place the baked chicken breast. Separate the layers of charred onion and place on green pea pure. Top it with snow peas, pomegranate pearls and green pea shoots. Serve hot garnished with dianthus flower petals.
