Garlic Butter Rice:
Ingredients:
Rice soaked ½ kg
Butter 50 grams
Green chili 2
Boiled boneless chicken 250 grams
Crushed black pepper 1 tsp
Salt 1 tsp
Green onion 1 tsp
Garlic chopped 1 tbsp
Green coriander ½ tsp
Cumin 1 tsp
Turmeric 1 tsp
Whole red chili (long) 6
Curry leaves 6
Oil 4 tbsp
Method:
Heat oil and fry garlic .when feel smell then add cumin ,green chili ,whole red chili ,curry leaves ,salt ,turmeric ,black pepper powder and add 2 cup of water and oil then add rice .when it comes on dum then add boneless chicken ,green coriander ,butter and green onion and leave on dum .after this stove off .
Lauki Mutton Curry:
Ingredients
Bottle gourd 250 grams
Mutton 1 kg
Cumin seeds ½ tsp
Fenugreek seeds ½ tsp
Coriander ½ tsp
Cinnamon sticks 2 sticks
Black pepper 5-10
Black cardamom 2-4
Green cardamom 6
Raisins ½ cup
Red chili powder 2 tbsp
Turmeric powder 1 tbsp
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Onion paste 2 tbsp
Green chilies 5-6 large
Salt to taste
Cooking oil ½ cup
Method:
Heat oil, add cumin seeds, fenugreek seeds, coriander, add, cinnamon stick (whole), black pepper (whole), black cardamom (whole), green cardamom (whole), after few seconds add ginger, garlic & onion paste, let it golden brown and add mutton (boiled) with mutton stock sauté until aromatic, it’s time to add red chili powder ,turmeric powder & green chilies. Sauté & mix all together until gravy separates oil, cut small pieces of bottle gourd & add into the gravy of mutton, add raisins, in last add salt to taste. Cook until Bottle gourd becomes tender, stir 1 -2 times in between, if required add water .garnish with raisins. Served with boiled rice or plain naan.
Palak aur Daal Cutlets:
Ingredients
Spinach 1 bunch
Split Bengal gram 1 ½ cups
Rice Flour ½ cup
Green Chilies (Crushed) 6
Coriander Leaves (Finely chopped) 1 bunch
White Cumin (Roasted and ground) 1 tsp
Red Chilies (Crushed) 1 tbsp
Black Pepper (Crushed) 1 tsp
Bread Slices 2
Egg Whites 2
Oil as required
