Fresh Turmeric is in season so pick some and make this recipe with salmon fillets marinated in a coriander and green chilli masala, steamed perfectly. A must-try recipe for all!
FISH IN TURMERIC LEAVES
Ingredients
4 Indian salmon fillets (rawas)
16 fresh turmeric leaves
¾ cup scraped coconut
1 inch ginger piece
2-3 green chillies
6-8 garlic cloves
½ cup chopped fresh coriander leaves
Salt to taste
2 tbsps lemon juice
Method
1. Dry-roast the fresh leaves from both the sides to make the leaves pliable. Cut the fish into 2 inch pieces and set aside.
2. In a blender jar, add coconut, ginger, green chilli, garlic cloves, coriander leaves and add ¼ cup water and blend to a smooth and thick paste.
3. For marination, take fish in a bowl and add salt, lemon juice and prepared paste and mix well. Set aside for 15-20 minutes.
4. Place 2 turmeric leaves on a worktop, overlapping each other forming a cross. Place the fish in the centre and fold the sides to form a parcel. Tie with a thread to secure it.
5. Heat sufficient water in a steamer, place the parcels in a steamer and steam for 10 minutes.
6. Open the parcel before serving and serve immediately.
