Ingerdients:
MUTTON ORDINARY MINCE, 1Kg.
DRIED FRIED ONIONS, 2, LARGE. (check my playlist called others for homemade fried onions).
THICK YOGURT, 1, CUP.
National GINGER & GARLIC PASTE, 1, Tbsp.
fresh green chillies, 3 to 4, in two pieces.
CRUSHED RED CHILLI, 2, Tbsp.
National SALT, 1,1/2. Tsp.
National ZEERA (cumin seed), 1, Tbsp.
LEMON JUICE, 3, Tbsp.
FRESH GINGER (2 inch), SLICED.
National GARAM MASALA (my homemade in playlist called others), 1, Tsp.
ROSTED CHICKPEAS, 3 Tbsp.
POPPY SEEDS, 1, Tbsp.
BLACK PEPPER CORNS(kali mirch), 10 to 15.
LONG (cloves), 4 to 6.
GREEN CARDAMOM, 4 TO 5.
1 PIECE OF COAL (for barbecue flavour).
OIL OR GHEE, 1, CUP.
Recipe:
grind the chick peas, cumin seeds, poppy seeds, cloves, black pepper corns, green cardamom to a powder and keep aside.
in a large pan add the mince, grinned powder of spices and chickpeas, ginger & garlic paste, salt, red chilli, lemon juice, yogurt, oil mix well cover and keep it in the fridge for 10 to 15 minutes.
after 10 to 15 minutes add the fried onions, on the flame and cook it on high flame once you see liquid forming lower the flame low to medium and cover and cook till the liquid drys and the oil comes on surface, keep stirring while cooking.
once the oil comes on surface add the ginger, garam masala powder, green chillies now flame should be on high and keep stirring for 4 minutes.
now make the coal hot, place a small bowl add the coal in it and a little oil on the coal and cover, this gives a bbq effect, once the smoke sets, garnish with remaining ginger and green chilli and serve hot with naan, roti 🙂
