Gujiyas stuffed with almonds, pisachios, walnuts and dates rolled in wonton sheets and deep fried to perfection.
DATE AND NUT WONTON GUJIYA
Ingredients
¼ cup pistachios, chopped
¼ cup almonds, chopped
¼ cup walnuts, chopped
¼ cup desiccatedcoconut
½ tbsp ppoppy seeds
5-6 dates, seeded and chopped
½ tsp green cardamom powder
7-8 wonton sheets
Refined flour slurry as required
Oil for deep frying
Rabri to serve
Pistachios, blanched and slivered for garnish
Silver warq for garnish
Method
1. Take pistachios in a bowl. Add almonds, walnuts,desiccatedcoconut, poppy seeds, dates and green cardamom powder. Mash the mixture with the back of a spoon and mix well.
2. Take wanton sheets on a worktop.Place spoons of mixture in centre. Apply refined flour slurry on edges. Fold the sheets into halves and seal the edges, press the edges with a fork to create a pattern.
3. Heat sufficient oil in a kadai, deep fry the wontons until golden and crisp. Drain on an absorbent paper.
4. Serve hot with rabri, garnished with pistachio slivers and silver warq.
