CRACKLING SPINACH CHICKEN

Ingredients

400 grams boneless chicken legs, cut into ½ inch pieces
1 large bunch fresh spinach, shredded
Salt to taste
White pepper powder to taste
1 tablespoon + 1 teaspoon soy sauce
3½ teaspoons chopped garlic
1½ teaspoons red chilli flakes
1 tablespoon cornflour
Oil for deep-frying
1 tablespoon + 1 teaspoon sesame oil
1 teaspoon chopped ginger
1 teaspoon chopped celery
1-2 dried red chillies
1 teaspoon sugar
1 medium onion, quartered and layers separated
2 teaspoons cornflour slurry
1 tablespoon chopped fresh coriander leaves
1 tablespoon chopped spring onion greens

Method

1. Put chicken pieces in a bowl. Add salt, pepper powder, 1 tablespoon soy sauce, 1 teaspoon garlic, 1 teaspoon chilli flakes and cornflour. Mix well and set aside for 10-15 minutes.
2. Heat sufficient oil in a kadai. Deep-fry spinach till crisp. Drain on absorbent paper.
3. Deep-fry chicken pieces in the same oil till crisp. Drain on absorbent paper.
4. Heat 1 tablespoon sesame oil in a non-stick pan. Add 1½ teaspoons garlic, ginger and celery, mix and sauté till fragrant.
5. Break and add red chillies alongwith 1 teaspoon soy sauce and mix well. Add ¼ cup water and stir.
6. Add salt, sugar, onions and cornflour slurry and mix. Add fried chicken and mix well.
7. Add coriander leaves and spring onion greens and mix well. Set aside.
8. Heat 1 teaspoon sesame oil in a non-stick pan. Add remaining garlic and sauté till lightly browned. Add remaining chilli flakes, fried spinach and salt and toss well.
9. Transfer the chicken on a serving platter. Top with the crackling spinach and serve immediately.
