Give your regular upma this sweet and slightly different twist by adding the goodness of corn and you will not regret it!

CORN UPMA

Ingredients

½ cup sweet corn, boiled and crushed
2-3 tbsps boiled sweet corn
1½ cups roasted semolina (rawa)
2 tbsps oil
½ tsp mustard seeds
½ tsp split skinless black gram (urad dal)
¼ tsp asafoetida (hing)
1-2 green chillies, chopped
½ inch ginger, chopped
8-10 curry leaves
1 medium onion, chopped
Salt to taste
½ tsp sugar
Sprig of coriander for garnish

Method

1. Heat oil in a non-stick pan, add mustard seeds, urad dal, asafoetida, green chillies, ginger, curry leaves, and sauté for 30 seconds.
2. Add onion and sauté till translucent. Add crushed corn, boiled corn, and sauté for 1 minute.
3. Add semolina, salt, sugar, and mix well. Add 3½ cups hot water, and mix well. Cover and cook till semolina is cooked completely.
4. Take the lid off and mix well. Take it off the heat.
5. Garnish with coriander sprig and serve hot.
