An oriental delicacy, Chinese Popcorn Prawns are wholesome, nutritious and delicious. A popular modern dish, this is a favourite and a must-try!

CHINESE POPCORN PRAWNS

Ingredients

12-16 medium prawns, shelled, deveined and roughly chopped
1 tablespoon oil + for deep-frying
1 egg white
2-3 tablespoons cornflour
Salt to taste
½ tablespoon finely chopped ginger
1 tablespoon finely chopped garlic
½ cup tomato ketchup
½ teaspoon red chilli flakes
¼ teaspoon lemon zest
½ teaspoon vinegar
Sliced spring onion greens for garnishing

Method

1. Heat sufficient oil in a kadai.
2. Put prawns in a bowl. Add egg white, cornflour and salt and mix well.
3. Deep-fry prawns in hot oil till golden brown. Drain on absorbent paper.
4. Heat 2 tablespoons oil in a non-stick pan. Add ginger and garlic and sauté till fragrant.
5. Add tomato ketchup, chilli flakes, lemon zest and some water and mix well.
6. Add salt and vinegar, mix well and remove from heat.
7. Garnish prawn popcorn with spring onion greens and serve hot with the prepared sauce.
