A flavourful pulao recipe perfect for lunch or dinner.

CHICKEN TIKKA PULAO

Ingredients

250 grams readymade chicken tikka
1½ cups Basmati rice, soaked and drained
2 tbsps ghee
1 tsp cumin seeds
3-4 green cardamoms
2-3 cloves
4-5 black peppercorns
1 star anise
1 mace blade
½ inch cinnamon stick
1 black cardamom
2 medium onions, sliced
1 tbsp ginger-garlic paste
2-3 green chillies, slit
1½ tbsps Tata Sampann Chicken Masala
Salt to taste
Fried onion for garnish
Mint sprigs for garnish

Method

1. Heat ghee in a deep nonstick pan. Add cumin seeds, green cardamoms, cloves, black peppercorns, star anise, mace, cinnamon stick, black cardamom and saute till the spices are fragrant.
2. Add the onions and sauté on medium heat till golden brown. Add ginger-garlic paste and sauté for 2-3 minutes.
3. Add green chillies and sauté for a few seconds.
4. Add Tata Sampann Chicken Masala, salt and mix well.
5. Add rice and mix well. Add 3 cups water and mix well. Once the mixture comes to a boil, cover and cook till the rice is ¾ done.
6. Add the chicken tikka pieces and mix well. Cover and cook till the rice is completely cooked.
7. Serve hot garnished with fried onions and mint sprig.
