Baked beans, sweet corn, bell pepper and grilled chicken stuffed into tortillas and topped with some sour cream and flavourful salsa; try this lip-smacking recipe of Chicken Taquittos.

CHICKEN TAQUITOS

Ingredients

1 grilled boneless chicken breast, cut into strips
12-14 ready-made tortillas
½ cup baked beans
½ cup blanched sweet corn kernels
½ cup chopped coloured capsicums
2½ tbsps white sauce
½ cup grated mozzarella cheese
¼ cup grated processed cheese
3-4 jalapenos, chopped
A pinch of mixed herbs
Salt to taste
Olive oil for greasing + drizzling
Salsa as required
Sour cream as required
Sprig of coriander for garnish

Method

1. Preheat the oven at 180˚C. Grease a baking dish with olive oil and set aside.
2. In a bowl, add baked beans, sweet corn, coloured capsicums, chicken, white sauce, mozzarella cheese, and processed cheese, jalapenos, mixed herbs, salt, and mix well.
3. Place a portion of the stuffing on a tortilla and roll it, place it on the baking dish. Similarly, make more rolls using the remaining stuffing. Bake for 8-10 minutes.
4. Drizzle a little olive oil on the baked taquitos and add salsa, sour cream and garnish with coriander sprig. Serve hot.
