CHICKEN KOSHA

Ingredients

750 gms chicken on the bone
Salt to taste
Black pepper powder to taste
1 tbsp ginger garlic paste
5 tsps mustard oil
1 tsp mustard seeds
1 bay leaf
3-4 dry red chillies
1 inch cinnamon stick
3-4 cloves
2-3 green cardamoms
4-5 black peppercorns
2-3 garlic cloves
2 medium onions chopped
1 tsp sugar
½ tsp turmeric powder
¾ tsp coriander powder
1 tsp red chilli powder
1 medium tomato, chopped
2-3 green chillies + for garnish

Method

1. In a bowl take chicken add black pepper, salt and ginger garlic paste. Mix well and set aside for 20-30 minutes.
2. Heat 2 tsps mustard oil in a nonstick pan and add the marinated chicken to it, cook till 5-7 minutes or golden brown in colour. Set aside.
3. Heat remaining oil in another nonstick pan, add mustard seeds and once they splutter add bay leaf, dried red chillies, cinnamon, cloves, green cardamom and black pepper, cook till fragrant.
4. Add garlic cloves and sauté for 2-3 minutes. Add onions and sugar, cook till onions are golden brown in colour.
5. Add ½ tbsp ginger garlic paste and cook for 1-2 minutes. Add turmeric powder, coriander powder and red chilli powder. Mix well and cook till the oil separates.
6. Add tomatoes and cook for 3-4 minutes. Add chicken and mix well.
7. Adjust seasoning, break the chillies and add to the pan. Cook till the chicken is done.
8. Serve hot, garnished with green chillies.
