Chicken pieces marinated in thick batter and deep fried till crispy.

CHICKEN KOLIWADA

Ingredients

250 grams boneless chicken, cut into thin slices
Salt to taste
1 tbsp Kashmiri red chilli powder
2 tsps roasted cumin (jeera) powder
1 tbsp ginger-garlic paste
1 tbsp lemon juice
½ cup gram flour (besan)
2 tbsps yogurt
½ tsp carom seeds (ajwain)
Chaat masala for sprinkling
Onions rings for serving
Lemon slices for serving
Green chutney for serving

Method

1. Take chicken slices in a bowl. Add salt, chilli powder, cumin powder, ginger-garlic paste and lemon juice and mix well.
2. Add gram flour and yogurt, mix well. Add carom seeds and mix well, set aside for 10-15 minutes.
3. Heat sufficient oil in kadai. Deep-fry the marinated chicken slices till golden brown and crisp. Drain on absorbent paper.
4. Sprinkle chaat masala and serve immediately with onion rings, lemon slices and green chutney.
