Chicken cubes cooked in butter garlic flavoured sauce with peppers.

CHICKEN IN BUTTER GARLIC SAUCE

Ingredients

250 grams chicken leg boneless, cut into cubes
2 tablespoons cornflour slurry
Salt to taste
White pepper powder to taste
½ egg white
Oil to deep-fry
2 tablespoons butter
½ tablespoon blended sesame oil
6-8 garlic cloves, chopped
1 tablespoon chopped celery
1 small green capsicum, seeded and cut intro triangles
1 small red bell pepper, seeded and cut intro triangles
1 small yellow bell pepper, seeded and cut intro triangles
5-6 button mushrooms, cut into thick slices
½ cup chicken stock
Spring onion curls for garnish
Fried rice for serving

Method

1. Combine together chicken pieces, salt, white pepper powder, cornflour, egg white and mix well. And set aside for 10 minutes
2. Heat sufficient oil in a pan
3. Deep-fry marinated chicken pieces in hot oil and cook till ¾ done and Drain on absorbent paper.
4. Heat 1 tablespoon butter in a non-stick pan ,blended sesame oil, garlic, celery, and sauté till raw flavour of garlic go away
5. Add mushroom and salt sauté for 2-3 minutes add ½ cup chicken stock and cook for 2-3 minutes
6. Add fried chicken pieces and green capsicum, red bell pepper, yellow bell pepper, add cornflour slurry and mix well,
7. Add remaining butter on a low heat and set aside
8. Serve hot with fried rice.
