Fluffy steamed Baos stuffed with spicy chicken pieces and strips of fresh vegetables.
CHICKEN BAO
Ingredients
100 grams boneless chicken, cut into 1 inch pieces
8-12 baos
1 tablespoon oil
1 tablespoon finely chopped garlic
½ tablespoon finely chopped ginger
1-2 fresh red chillies, finely chopped
2 tablespoons chopped spring onion greens
Salt to taste
Crushed black peppercorns to taste
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 tablespoon honey
Shredded cabbage as required
Carrot strips as required
Thin cucumber slice halves as required
Fresh coriander sprigs for garnishing
Method
1. Heat oil in a non-stick pan. Add garlic, ginger and red chillies, mix and sauté for a minute.
2. Add spring onion greens and mix well. Add chicken pieces and mix.
3. Add salt, crushed peppercorns, soy sauce and oyster sauce, mix well and cook for 1-2 minutes.
4. Add some water and mix. Add honey, mix well and cook till the chicken is fully done.
5. Stuff baos with some cabbage, some carrot strips, a cooked chicken piece and some cucumber slices.
6. Garnish with coriander sprigs and serve immediately.
