Chef Peter Gilmore is an Australian-born culinary artist and restaurateur who is widely regarded as one of the most innovative and influential chefs in Australia. He was born on 10 April 1968 in Sydney, Australia.
Gilmore grew up in the small town of Sawtell on the mid-north coast of New South Wales, where he developed an early passion for cooking. He studied at the Northern Rivers College of TAFE in Lismore, and later honed his skills at some of Australia’s top restaurants, including Banc in Sydney and The Heights in Melbourne.
In 2001, Gilmore became the head chef at Quay, a fine dining restaurant in Sydney. Under his leadership, Quay became one of Australia’s most celebrated restaurants, earning numerous accolades and awards, including three stars in the Australian Gourmet Traveller Restaurant Guide and three hats in The Sydney Morning Herald Good Food Guide. In 2019, Quay was ranked 16th in the prestigious World’s 50 Best Restaurants list.
Gilmore is known for his inventive and creative approach to cooking, using fresh, locally sourced ingredients to create dishes that are both visually stunning and delicious. He is particularly renowned for his use of Australian ingredients, including indigenous herbs, spices, and seafood.
