Cheesy Baked Zucchini Fries
This snack is a cheese-lover’s dream come true! Unpeeled zucchini fingers are coated excitingly with cheese and breadcrumbs, and baked in an oven till it acquires a uniquely cheesy crispness!
It is basically the kind of snack that is both crisp and chewy, an amazing texture that everybody loves. To make these Cheesy Baked Zucchini Fries, we have suggested parmesan cheese powder, but you can also use freshly grated parmesan cheese. Serve this as an appetizer or evening snack, with Chipotle Sauce.
Preparation Time: 20 minutes.
Cooking Time: Nil.
Serves 4.
Baking Time: 45 minutes.
Baking Temperature: 200°C (400°F).
For the zucchini fries
½ cup parmesan cheese powder
2 cups zucchini fingers (unpeeled)
½ cup bread crumbs
½ tsp freshly ground black pepper (kalimirch)
Salt to taste
½ cup plain flour (maida)
½ cup milk
For the chipotle sauce (makes 1 cup)
8 pandi red chillies, broken into pieces
½ cup mayonnaise
½ tbsp chopped dill leaves (suva/shepu)
1 tbsp finely chopped coriander (dhania)
¼ cup thick curds (dahi)
¼ tsp cumin seeds (jeera) powder
½ tsp sea salt
For the zucchini fries
1. Combine the bread crumbs, cheese powder, pepper powder and salt in a deep bowl, mix well and keep aside.
2. Dip each zucchini finger in the plain flour, then in the milk and finally roll in the bread crumbs mixture till they are coated from all the sides.
3. Place them on a butter paper, then place on a baking tray and bake in a pre-heated oven at 200°c (400°f) for 25 minutes, turn them over and cook on another side for 15 minutes.
4. Serve immediately with chipotle sauce.
For the chipotle sauce
1. Blend the chillies in a mixer till coarse.
2. Add all the other ingredients and mix well.
Store in an air-tight container in the fridge and use as required.
