BUTTER GRILLED FISH

Ingredients

1 rawas fish fillet, halved
3-4 green garlic stalks
1 tbsp mixed herbs (thyme, rosemary, oregano)
1 lemon
6-7 asparagus
Salt to taste
1 tbsp olive oil
1 tsp oil
2 tbsps butter

Method

1. Remove bulbs of green garlic and finely chop them. Remove leaves of thyme, rosemary, oregano herbs and finely chop them. Slice a lemon in half. Cut asparagus into half. Set aside.
2. Marinate each halves of fish fillet in a plate with ½ lemons juice, salt, 1 tsp green garlic chopped. Flip over, add lime juice from remaining ½ of lemon and add salt. Add olive oil and mix well on both sides.
3. Heat oil and 1 tbsp butter in a non-stick grill pan, add fish fillets and fry on medium heat till golden grill marks appear on both sides of fish. Keep basting occasionally.
4. Add mixed herbs, green garlic asparagus in pan and sauté on medium heat.
5. Transfer sautéed items on a plate, set aside.
6. Add remaining butter in pan, melt it and add remaining green garlic, mixed herbs, add another ½ lemons juice. Sauté for a minute on medium heat.
7. Transfer sautéed asparagus mixture on plate and add place a fish fillet and add sautéed remaining buttered mixture on top.
8. Serve hot.
