Boti Biryani:
Ingredients:
Rice ½ kg
Onions 3
Mint leaves 2 sprigs
Ginger paste 2 tsp
Cinnamon sticks 2 sticks
Star anise 2
Yoghurt 1 cup
Clarified butter 2 tbsp
Coriander powder 1 tsp
Mace powder 1 tsp
Lemon 1
Mutton boneless, cut in small pieces ½ kg
Tomatoes 2
Coriander leaves 2 sprigs
Garlic paste 2 tsp
Cloves 4
Capers 1 tsp
Oil 5 tbsp
Chili powder 2 tsp
Chili sauce 1 tbsp
Black pepper 2 tsp
Green cardamoms 4
Method :
Marinate boti in curd for 20 minutes. Add the juice of one lemon. Heat oil. Add in sliced onions and fry golden, then add cinnamon, cardamom, cloves, star anise, caper, mace powder, mint leaves and coriander leaves. Add ginger-garlic paste, sliced tomatoes,marinated mutton, coriander powder, chilli powder, chili sauce and water. Add salt and cook the mutton. Once the meat is cooked and tender, add the pepper powder, soaked rice, the remaining mint and coriander leaves. let it simmer for about 20 minutes and then add ghee. Serve it with raita.

Colada:
Ingredients:
Pineapple juice ½ cup
Coconut milk ¼ cup
Red syrup 2 tbsp
Coconut 2 tsp
For Garnishing:
Pineapple 1 piece
Ice cubes 2-3
Method:
Add pineapple juice, coconut milk, red syrup and ice cubes to a blender. Mix well. In a cocktail glass, place the crushed ice at the bottom and pout the blended mixture. Place a pineapple piece to the rim of the glass and top with some shredded coconut before serving.

Lassi:
Ingredients:
Yogurt 1 cup
Mint as required
Ice as required
Cumin 1 tsp
Method:
Mix everything together in blender. Serve chilled.
