Baked Fettuccine with Spinach in Paneer Sauce

Mouth-watering and delicious italian preparation of cooked fettuccine with a healthy dose of spinach and a luscious cottage cheese sauce. A generous sprinkling of grated cheese before baking, ensures a perfect finish to the baked fettuccine with spinach in paneer sauce. Garnish with chilli flakes and serve with freshly toasted garlic bread, for a memorable continental meal.

Preparation time: 15 minutes Cooking time: 8 minutes Serves 4.
Baking temperature: 180°C (360 °F) Baking time: 20 minutes.

1½ cups cooked fettuccine
¾ cup blanched and chopped spinach (palak)
1 tbsp oil
¼ cup finely chopped onions
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
Salt and black pepper (kalimirch) powder to taste
¼ cup milk
5 tbsp grated processed cheese

To be blended into a smooth paneer sauce
1 cup grated fresh paneer (cottage cheese)
1 cup milk
Salt to taste
½ tsp nutmeg (jaiphal) powder

For the garnish
½ tsp dry red chilli flakes

1. Heat the oil in a broad non-stick pan, add the onions, garlic and green chillies and sauté on a medium flame for 1 minute.
2. Add the spinach and salt and cook on a medium flame for 30 seconds, while stirirng occasionally.
3. Add the fettuccine, paneer sauce and pepper, mix lightly and cook on a medium flame for 2 to 3 minutes, while tossing occasionally.
4. Add the milk and 2 tbsp of cheese and mix well.
5. Transfer the mixture into a baking dish, sprinkle the remaining 3 tbsp of the grated cheese evenly over it.
6. Microwave on HIGH for 4 to 5 minutes or bake in a pre-heated oven 180°C (360°F) for 15 minutes.
Serve hot garnished with chilli flakes
