BAJRA MOOLI ROTI
Ingredients
1 cup pearl millet (bajra) flour + for dusting
½ cup grated white radish
Salt to taste
½ tsp dried mango powder (amchur)
½ tsp garam masala powder
1 tsp red chilli powder
1 small onion, finely chopped
2 tbsps chopped fresh coriander leaves
2 green chillies, chopped
3 tbsps whole wheat flour
Ghee for applying
Pickle to serve
White butter to serve
Method
1. Take radish in a bowl, sprinkle salt and mix well. Set aside for 5-10 minutes.
2. Take a muslin cloth and transfer the radish on it and squeeze out the excess water and transfer on a parat.
3. Add dried mango powder, garam masala powder, red chilli powder, onion and chopped coriander, green chillies, bajra atta and whole wheat flour and mix well. Add ¾ cup water and knead to a soft dough.
4. Take a portion of the dough and shape it into a ball and slightly flatten it. Dust the worktop with bajra atta and press and spread to make a thin disc.
5. Heat a non-stick tawa, place the disc and cook on both sides till done. Apply ghee on each side and cook further for a minute.
6. Serve hot with pickle and white butter.
