As the name states, Andhra Chilli Chicken originates from Andhra Pradesh. This south indian chicken starter is packed with flavourand the wholle dry chillies add a spice which makes this dish stand out!

ANDHRA CHILLI CHICKEN

Ingredients

750 grams whole chicken, cut into 4 (2 breasts, 2 legs) with slits
10-12 dried red chillies
1 tablespoon + 2 teaspoons lemon juice
Salt to taste
2 inch piece ginger
7-8 garlic cloves
10-15 curry leaves
½ cup yogurt
Refined flour (maida) for dusting
2 tablespoons oil

Method

1. Add 1 tablespoon lemon juice and salt to chicken and mix well. Set aside for 10-15 minutes.
2. Blend together ginger, garlic, curry leaves, dried red chillies, remaining lemon juice and sufficient water to a fine paste.
3. Add the prepared paste to the chicken along with yogurt and salt, mix well and refrigerate to marinate for 2-3 hours.
4. Dust the marinated chicken pieces with flour.
5. Heat oil in a non-stick pan. Place the chicken pieces in it and cook on high heat for 4-5 minutes. Flip, cover and cook till fully done.
6. Serve hot with onion rings and lemon slices.
