PUDINA PANEER PULAO – (Serves – 4)

Ingredients

1 cup fresh mint leaves (pudina) + for garnishing
250 grams cottage cheese (paneer), cut into cubes
1½ cups Basmati rice, soaked and drained
2-3 tablespoons ghee
1 inch cinnamon
10-12 black peppercorns
3-4 cloves
2 green chillies, finely chopped
2 medium onions, sliced
1½ tablespoons ginger-garlic paste
½ cup yogurt
Salt to taste

Method

1. Heat ghee in a deep non-stick pan. Add cinnamon, peppercorns, cloves and green chillies, mix and sauté till fragrant.
2. Add onions and sauté till lightly browned. Add ginger-garlic paste, mix and sauté for 2 minutes.
3. Add mint leaves, mix and cook for 1-2 minutes. Add ½ cup yogurt and mix well.
4. Add cottage cheese, rice, salt and 3 cups water, mix well, cover and cook till the rice is fully done.
5. Garnish with mint leaves and serve hot.
