Brinjal and potato pieces cooked in spicy onion tomato masala with dry spice powders.
ALOO BAINGAN
Ingredients
3 medium potatoes (aloo), peeled and cut into wedges
10-12 small brinjals (baingan), cut into wedges
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1 tablespoon finely chopped garlic
1 medium onion, finely chopped
1 medium tomato, finely chopped
Salt to taste
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
1 tablespoon chopped fresh coriander leaves
Method
1. Heat oil in a non-stick pan. Add cumin seeds and sauté till seeds change colour.
2. Add garlic and mix. Add onion, mix and sauté till it turns translucent.
3. Add potatoes, mix, cover and cook for 2 minutes. Add brinjal and mix well.
4. Add tomato and mix. Add salt, chilli powder, turmeric powder and coriander powder, mix well, cover and cook till the vegetables are tender.
5. Add garam masala powder and coriander leaves, mix well and let it get heated through.
6. Serve hot.
