STRAWBERRY KHEER
Ingredients
9-10 fresh strawberries, washed
½ cup + 2 tbsps sugar
5 cups milk
¼ cup rice, soaked for 15-20 minutes
A pinch of green cardamom powder
Strawberry slices for garnish
Pistachio slivers for garnish
Method
1. Roughly chop strawberries and set aside. Heat a non-stick pan, add strawberries, sauté well.
2. Add 2 tbsps sugar and mix well. Cook till the strawberries are pulpy, sautéing occasionally.
3. Heat milk in a non-stick deep bottom pan; let it come to a boil, stirring occasionally.
4. Add rice and mix well. Cook till the rice is completely cooked.
5. Add remaining sugar and mix well. Cook for 4-5 minutes on low heat. Add green cardamom powder and mix well.
6. Switch the heat off and add the strawberry compote, mix well. Garnish with strawberry slices and pistachio slivers. Serve.
