A super comforting bowl of soup made with mushrooms and coriander is just what you need after a tiresome day.

MUSHROOM DHANIA SHORBA

Ingredients

10-12 button mushrooms, thinly sliced
12-15 fresh coriander stalks, washed and roughly chopped
2 tbsps chopped fresh coriander leaves
2 tsps Tata Sampann Coriander powder
½ tsp oil
1 large onion, finely chopped
Salt to taste
2 tsps finely chopped ginger
2 tsps finely chopped garlic
Crushed black peppercorns to taste
4 tsps lemon juice
Fresh coriander sprig for garnish
Croutons to serve

Method

1. Heat oil in a non-stick deep pan, add onion and mix well. Add a pinch of salt and mix till translucent. Add ginger and garlic and sauté for 1 minute.
2. Add mushrooms and sauté well. Add salt and mix, cook for 2 minutes. Add coriander stalks and sauté for a few seconds.
3. Add 1¾ cups water and mix well. Add crushed black peppercorns and 1 tbsp chopped fresh coriander leaves.
4. Add Tata Sampann Coriander Powder and mix well. Cover and cook for 10-15 minutes.
5. Switch the heat off and blend the mixture using an electric hand blender till blended well.
6. Place the pan back on heat, add 1 cup water and mix, cook till the mixture comes to a boil. Cook for 5 minutes.
7. Switch the heat off and add lemon juice, mix well and transfer into a serving bowl. Garnish with coriander sprig and serve hot with croutons.
