Nachos With Salsa And Cheese Sauce :
Ingredients for Nachos
Maize flour 1 cup
Flour 1/2 cup
Dried oregano 1/2 tsp
Salt to taste
Cooking oil 2 tsp
water as required
Ingredients for Cheese Sauce:
Cheddar cheese 1 cup
Milk 1 cup
Corn flour 1 tbsp
Hot sauce 1-2 tbsp
Ingredients for Salsa
Oil 3tbsp
Onion 1
Tomatoes (chopped) 3-4
Jalapenos (chopped) 2tbsp
Tomato puree 1 tbsp
Paprika powder 1/2 tsp
Garlic ( chopped) 1tbsp
Green chili 2tbsp
Dried thyme 1/2 tsp
Dried oregano 1/2 tsp
Crushed red chili 1tsp
Rosemary 1/2tsp
Sugar 1 tsp
Black paper powder 1/2 tsp
Salt 1/2 tsp
ingredients for sour cream
Cream 1 cup
Lemon juice 2tsp
METHOD:
For nachos in a bowl add corn flour, salt, oregano, oil and water add and mix then knead the dough. then leave to rise for 15 minutes .now roll it and then cut it then fry in a oil .For cheese sauce add corn flour and milk and mix .then add chadder cheese melted .then add corn flour and milk mix then cook .now add hot sauce and mix well then remove and cool it .for salsa heat oil in a pan and fry onion ,garlic ,tomatoes Jalapenos ,tomato puree ,paprika powder ,gren chili ,thyme ,oregano ,crushed red chili ,rose marry ,black pepper ,sugar and salt mix well and cook for 5 minutes .for sour cream add lemon juice then read sour cream .for serving firstly nachos place on the plate and then pour salsa and sour cream and serve .
Khausay:
Ingredients for Khausay Curry:
Gram flour 4tbsp
Red chili powder 1 tbsp
Turmeric powder 1 tbsp
Salt to taste
Garlic 1/2 tbsp
Ginger 1/2 tbsp
Green chilies 1/2 tbsp
Yogurt 250 gm
Curry leaves 6-8
Cumin 1 tsp
Oil 4 tbsp
Coconut milk 1/4 cup
Ingredients for Khausay :
Chicken 1/2 kg
Tomatoes 1/2 kg
Crushed red chili 1- 2 tbsp
Red chili powder 1/2 tbsp
Turmeric powder 1/2 tsp
Cumin powder 1/2 tbsp
Ginger garlic paste 1tbsp
Salt to taste
Oil ½ cup
Ingredients for spaghetti:
Spaghetti (boiled) 1 packet
Oil 1-2 tsp
salt to taste
Ingredients for Garnish
Lemon for garnish
Coriander for garnish
Chips for garnish
Fry garlic for garnish
Chaat masala for garnish
METHOD:
For Khusay in a blender add gram flour ,red chili powder ,turmeric ,coconut milk ,salt ,ginger ,garlic ,green chili ,yogurt and water add then blend it .then in a pan add oil and cook .when cook the curry then add curry leaves and do the tempering .for khausay heat oil in a pan then add ginger garlic paste ,chicken and tomato cook for 5 minutes .then add red chili powder ,turmeric ,cumin and salt add and roast it .when oil is separate then stove off .for spaghetti in a pan heat water ,now add salt and oil then add spaghetti and boil .when spaghetti cook then strain it .finally garnish with khausay .
Beef Broccoli :
Ingredients for Marination:
Beef 250 gm
Salt to taste
Chicken powder 1/2 tsp
White pepper 1/4 tsp
Corn flour 1/2 tbsp
Egg half
Ingredients for Broccoli Sauce:
Oil 3-4 tbsp
Garlic (chopped) 1 tsp
Salt to taste
Chicken powder 1/2 tbsp
Oysters sauce 1/2 tbsp
Dark soya sauce 1/2 tbsp
Crushed black pepper 1-2 tbsp
White pepper 1/2 tsp
Broccoli ½ bunch
Corn flour as required
Ingredients for Garlic Fried Rice:
Rice (boiled) 250 gm
Salt to taste
Oil 4-5 tbsp
Garlic (chopped) 1 tbsp
Chicken powder 1/2 tsp
Soya sauce 1 tbsp
Spring onion as required
