RECHEADO FISH:
Ingredients:
Fish ½ kg
Lemon juice as required
Recheado paste as required
Oil for frying
Salt to taste
Lemon to serve
Method:
Season fish with salt and lemon juice. Apply the ground paste. Heat oil and fry fish on both sides till cooked through. Place fish on absorbent paper towels. Serve warm with lemon wedges.
RECHEADO PASTE:
Ingredients:
Kashmiri dried red chilies15
Black peppercorns 8
cloves 8
Cinnamon sticks 2
Green cardamoms 4
Cumin seeds 1 tsp
Turmeric ½ tsp
Garlic 6 cloves
Tamarind a small ball
Sugar 1 tsp
vinegar ¾ cup
Salt to taste
Method:
Grind the above ingredients in a blender till fine. Do not add any water. The masala should be thick and not runny. Make this masala ahead, lightly saute in little oil, cool and refrigerate for future use. The vinegar in the paste will preserve it for some days
APPLE DESSERT CAKE:
Ingredients:
Apples (peeled &diced) 2 large
Raisins 1 cup
Honey ½ cup
Cinnamon 2 tsp
Butter melted ½ cup
Yogurt ½ cup
Flour 2-½ cups
Baking powder 1 tsp
Method
Mix apples, raisins, butter, honey and yogurt. Then mix cinnamon, baking powder and flour well, and add to the apple mixture. Put in a dish and bake at 180 degrees C for 45 minutes. Serve hot.
