Ingredients

  • 2 cups rolled oats
  • 1 cup chopped pecans or walnuts
  • 1/2 cup shredded carrots
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the oats, nuts, carrots, and raisins.
  4. In a separate bowl, whisk together the coconut oil, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  5. Pour the wet ingredients over the dry ingredients and stir until well combined.
  6. Spread the mixture evenly on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Let cool completely before breaking into clusters.
