PAN PIZZA
Ingredients
Readymade pizza dough as required
Olive oil for greasing + drizzling
Dried mixed herbs for sprinkling
¼ cup pizza sauce
6 tablespoons grated mozzarella cheese
6 tablespoons grated processed cheese
100 grams grilled chicken, cut into cubes
½ small yellow capsicum, cut into triangles
1 small onion, quartered and layers separated
½ small green capsicum, cut into triangles
½ small red capsicum, cut into triangles
5-6 button mushrooms, sliced
Crushed black peppercorns to taste
Salt to taste
5-6 fresh basil leaves
2-3 green olives, sliced
2-3 black olives, sliced
Fresh basil sprig for garnishing
Method
1. Preheat oven to 180º C.
2. Knock back the pizza dough and flatten into a thick disc.
3. Grease an ovenproof pan with some olive oil and keep the disc on it. Drizzle some olive oil and sprinkle some mixed herbs on top.
4. Spread pizza sauce and top with 2 tablespoons mozzarella cheese, 2 tablespoons processed cheese, chicken cubes, yellow capsicum, onion, green capsicum, red capsicum and mushrooms.
5. Drizzle some more olive oil and sprinkle mixed herbs, crushed peppercorns and salt. Top with torn basil leaves, green and black olives, remaining processed cheese, remaining mozzarella cheese and drizzle some more olive oil.
6. Put the pan in the preheated oven and bake for 10-15 minutes.
7. Cut into wedges, garnish with basil sprig and serve hot.
