Boiled egg wedges tossed in spicy onion tomato masala and served with pav. This recipe is irresistible.
DESI ANDA FRY
Ingredients
4 eggs (anda), hard-boiled, peeled and cut into wedges
1 tablespoon oil
1 tablespoon butter + as required
1-2 green chillies, finely chopped
1 tablespoon ginger-garlic paste
1 medium onion, finely chopped
1 medium tomato, finely chopped
Salt to taste
1 teaspoon red chilli powder
1 tablespoon garam masala powder
1 tablespoon chopped fresh coriander leaves
Pavs for serving
Method
1. Heat oil and butter in a non-stick pan. Add green chillies and ginger-garlic paste, mix well and sauté till fragrant.
2. Add onion, tomato and salt, mix well and cook till tomatoes turn soft and pulpy.
3. Add chilli powder and garam masala powder and mix. Add eggs, coriander leaves and some water, mix well and cook till moisture dries. Remove from pan and set aside.
4. Heat some butter in the same pan. Place halved pavs on it and toast slightly from both sides.
5. Serve with hot anda fry.
