A quick and easy bhel recipe made using kaccha jowar or sorghum.

SPICY PAUNK BHEL

Ingredients

1½ cups raw sorghum (paunk / kachcha jowar)
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 medium potato, boiled, peeled and cut into cubes
2 tbsps chopped raw mango
5-6 papdis + garnish
2-3 tbsps sweet tamarind chutney
1½ tbsps mint chutney
½ tsp chaat masala
Salt to taste
1 tbsp lemon juice
2 tbsps chopped fresh coriander leaves + garnish
10-12 green garlic stocks, chopped
1 tbsp thick yogurt
Pepper sev for garnish

Method

1. In a bowl, add paunk, onion, tomato, potato, and raw mango. Crush papdis and add them to the bowl, add sweet tamarind chutney, mint chutney, chaat masala, salt, lemon juice, coriander leaves, green garlic stocks, yogurt and mix well.
2. Transfer into a serving bowl, garnish with pepper sev, papdi and coriander leaves. Serve immediately.
