A quick and easy way to make restaurant-style triple fried rice at home!

CHICKEN TRIPLE FRIED RICE

Ingredients

300 grams boneless chicken breasts, cut into 1 inch cubes
1½ cups cooked rice
½ cup boiled noodles
½ cup fried noodles + for garnish
Salt to taste
Crushed black peppercorns to taste
4 tbsps corn flour
1 tbsp sesame oil
2 dried red chillies
100 grams Tata Sampann Chinese Chutney
½ tbsp tomato ketchup
¼ tsp soy sauce
½ cup boiled chicken breast, cut into small pieces
2 tbsps chopped spring onion greens + for garnish
4 eggs
4 tsps oil
Sliced spring onion greens for garnish

Method

1. Heat sufficient oil in a wok. Meanwhile, add chicken pieces, salt, crushed black peppercorns, 1 tbsp corn flour in a bowl and mix well.
2. Drop the pieces into the hot oil and deep fry on medium heat till golden and crisp. Drain on an absorbent paper.
3. For the gravy, heat oil in a non-stick pan, break the red chillies in small pieces and add to the pan.
4. Add 70 grams of the Tata Sampann Chinese Chutney in the pan and mix well. Cook for 1-2 minutes. Add 1 cup water, mix well and cook till the mixture comes to a boil.
5. Add salt, crushed black peppercorns and the fried chicken pieces. Mix well and allow the mixture come to a boil.
6. Add a little water to the remaining corn flour and mix well. Add 2 tbsps corn flour slurry into the boiling mixture, mix well and cook till the mixture thickens.
7. For the fried rice, heat remaining sesame oil in a non-stick wok, add remaining Tata Sampann Chinese Chutney and mix well. Cook till the oil separates.
8. Add cooked rice, boiled noodles, fried noodles, tomato ketchup, soy sauce and salt. Mix well and cook for 1 minute.
9. Add boiled chicken and cook for 2-3 minutes. Add spring onion greens and mix well. Take it off the heat.
10. For the fried egg, break 1 egg in a bowl, add salt and whisk well using a fork.
11. Heat 1 tsp oil in a small non-stick pan, add the whisked egg in it and cook for 1-2 minutes on medium heat.
12. Flip the egg and cook for 1-2 minutes. Fold it in half and take it off the heat.
13. On a serving plate, place the prepared fried rice, pour over the chicken gravy and place the cooked egg. Garnish with fried noodles and spring onion greens.
14. Serve hot.
