Chef Joseph Yoon specializes in gourmet bug dishes and recently opened the pop-up Brooklyn Bugs. His goal is to remove the stigma and sensationalism around eating insects. Eating insects is actually a healthy way to get protein and eat sustainably. We visited the pop-up to try a tasting menu of his bug dishes.
