A simple and easy recipe of boiled potatoes tempered with mild ingredients. This recipe is best had during fasts.
VRATWALE ALOO
Ingredients
3-4 medium potatoes, boiled and peeled
2-3 green chillies, chopped
2 tablespoons ghee
1 teaspoon cumin seeds (jeera)
Rock salt to taste
½ cup roasted and crushed peanuts
2 tablespoons scraped fresh coconut + for garnishing
2 tablespoons chopped fresh coriander leaves + for garnishing
Method
1. Cut green chillies into pieces and potatoes into cubes.
2. Heat ghee in a non-stick pan. Add cumin seeds and sauté till the seeds change colour.
3. Add green chillies, potatoes and rock salt and toss well. Add peanuts, cover and cook for 2-3 minutes.
4. Garnish with coconut and coriander leaves and serve hot with rajgira puri.
