A bowl of this piping hot Peanut Curry along with some vari or samo rice is all you need to turn your fast into a feast.
VRAT WALI PEANUT CURRY
Ingredients
1 cup roasted peanuts, peeled and unsalted
1 tsp red chilli powder
1 tbsp ghee
1 tsp cumin seeds (jeera)
2 tsps chopped jaggery
2-3 kokum petals
Senda namak to taste
Cooked vari to serve
Method
1. Take peanuts in a blender jar, add red chilli powder and½ cup water and blend to a fine paste.
2. Heat ghee in a non-stick kadai, add cumin seeds and let them change colour. Add the prepared paste and mix well. Cook for 1-2 minutes.
3. Add 1 cupwater and mix well. Cook for 2-3 minutes. Add jaggery, kokum petals and senda namak and mix well.
4. Serve hot with vari.
