This tangy soup/curry preparation made with fresh tomatoes is extremely popular in Maharashtrian homes. Do try !

TOMATO SAAR

Ingredients

3-4 medium tomatoes, roughly chopped
Salt to taste
2-3 tablespoons chopped fresh coriander leaves
4-5 garlic cloves
1 inch ginger, roughly chopped
1 green chilli, broken
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds (jeera)
12-14 curry leaves
¼ teaspoon asafoetida (hing)
¼ teaspoon turmeric powder
1 teaspoon sugar
1 teaspoon chopped fresh coriander leaves
Fresh coriander sprig for garnishing

Method

1. Pressure cook tomatoes and salt in 1 cup water till the pressure is released 4-5 times.
2. Blend together coriander leaves, garlic, ginger and green chilli with some water to a smooth paste.
3. Blend cooked tomatoes to a fine puree using a hand blender.
4. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves and asafoetida, mix and sauté till fragrant.
5. Add prepared green paste and mix well. Add sufficient water and stir to mix. Add turmeric powder and mix.
6. Strain in the tomato mixture and mix. Add sugar and salt, mix well and simmer for 5-7 minutes.
7. Add coriander leaves, mix well and bring to a boil.
8. Garnish with coriander sprig and serve hot.
