Full of flavor and nutrients, these pan fried rajma and sweet potato cutlets are a healthy and tasty substitute to deep fried ones.
SWEET POTATOES AND RAJMA CUTLETS
Ingredients
¾ cup boiled kidney beans (rajma)
½ cup boiled and grated sweet potatoes
1 small onion, chopped
1 inch ginger, finely chopped
8-1 garlic cloves, finely chopped
2-3 green chillies, chopped
2 tbsps freshly chopped coriander leaves
Chaat masala to taste
2 tsps Tata Sampann Red Chilli Powder
Salt to taste
Semolina for coating
Oil for shallow frying
Coriander leaf for garnish
Onion quarters to serve
Lemon quarters to serve
Tomato ketchup to serve
Method
1. In a food processor jar, add rajma and coarsely crush it. Transfer into a large bowl.
2. In the same bowl, add sweet potatoes, onion, ginger, garlic, green chillies, chopped coriander, chaat masala and add Tata Sampann Red Chilli Powder, salt and mix till well combined.
3. Take semolina on a plate, take a portion of the prepared mixture and shape it into a cutlet. Coat with semolina and set aside.
4. Heat sufficient oil in a non-stick pan, shallow fry each cutlet till golden and crisp. Drain on absorbent paper.
5. Garnish with coriander leaf. Sprinkle chaat masala and serve hot with onion quarters, lemon quarters and tomato ketchup.
