Idli batter stuffed with potato mixture and steamed.

STUFFED IDLIS

Ingredients

1 cup idli batter
2-3 medium potatoes, boiled, peeled mashed
1 tablespoon oil
½ teaspoon mustard seeds
¼ teaspoon asafoetida (hing)
1 teaspoon shredded curry leaves
1 green chilli, chopped
1 teaspoon finely chopped ginger
1 teaspoon finely chopped garlic
¼ teaspoon turmeric powder
1 tablespoon finely chopped fresh coriander leaves

Method

1. Heat oil in a non-stick pan. Add mustard seeds and sauté till the seeds splutter.
2. Add asafoetida and curry leaves, mix and let the leaves crackle. Add green chillies, ginger and garlic, mix and sauté well.
3. Add potatoes and mix. Add salt, turmeric powder and coriander leaves and mix well. Add some water, mix, cover and cook till the mixture dries. Remove from heat and set aside to cool.
4. Heat sufficient water in a steamer.
5. Pour some batter into idli mould stand filling ¾th. Stuff with some cooked mixture and top with some more batter.
6. Place the stand in the steamer, cover and steam for 8-10 minutes.
7. Serve hot with coconut chutney.
