STRAWBERRY CHICKEN

Ingredients

2 chicken breasts with wing bone intact
Salt to taste
Crushed black peppercorns to taste
2 tsps Worcestershire sauce
2 tbsps oil
Fresh strawberries cut into quarters for garnish
Red radish slices for garnish
Micro greens for garnish
Sauce
8-10 strawberries, chopped
Salt to taste
Crushed black peppercorns to taste
½ tsp garlic powder
½ tsp onion powder
½ tbsp tomato ketchup

Method

1. Make incisions on the chicken breasts, sprinkle salt, crushed black peppercorns, Worcestershire sauce and rub well. Set aside to marinate for 15-20 minutes.
2. Heat a non-stick pan, add strawberries and sauté well. Cook till soft and pulpy.
3. Add salt, crushed black peppercorns, garlic powder, onion powder, tomato ketchup, mix well and cook for 1-2 minutes.
4. Add ¼ cup water and mix well. Cook for 1 minute and take it off the heat. Allow to cool and grind to a fine paste.
5. Heat oil in a non-stick griller, place the marinated chicken and grill for 3-4 minutes on high heat. Flip and apply the prepared sauce and spread it evenly. Cook for 3-4 minutes on high heat.
6. Reduce the flame, flip and apply the prepared sauce on top, and cook till the chicken is cooked completely
7. Take it off the heat. Cut into slices and transfer to a serving plate.
8. Garnish with fresh strawberries, red radish slices and micro greens.
9. Serve hot with the prepared sauce.
