These Shrimp Cakes, made with shredded shrimps and a masala mix, deep fried till golden brown and crisp makes for a perfect appetizer!

SHRIMP CAKES

Ingredients

250 grams shrimps, washed
2 medium potatoes, boiled, peeled and grated
½ tsp turmeric powder
2 green chillies, finely chopped
1 tbsp malvani masala
Salt to taste
1 tsp ginger-garlic paste
1½ tbsps freshly chopped coriander leaves
3 tbsps rice flour
¾ tsp red chilli powder
1 egg, beaten
Panko breadcrumbs
Green chutney to serve
Lemon wedges to serve

Method

1. Take shrimps in a bowl, add potatoes, turmeric powder, green chillies, malvani masala, salt, 1 tsp ginger-garlic paste, chopped coriander, rice flour, and mix well.
2. Add red chilli powder and mix well.
3. Grease your hand with oil and take a portion of the prepared mixture, shape it into a ball, slightly flatten it and make a hole in the center.
4. Dip the prepared mini cakes in egg and coat it with panko, set aside.
5. Heat sufficient oil in a wok, deep fry the prepared shrimp cakes till golden and crisp. Drain on an absorbent paper.
6. Serve hot with green chutney and lemon wedges.
