Creamy rich shrikhand made in Maharashtrian homes. East to make and yummy to taste.
SHRIKHAND
Ingredients
2 cups yogurt
2 tbsp powdered sugar
7-8 almonds, cut into slivers
8-10 pistachios, cut into slivers
A pinch of saffron, soaked in 2 tbsp milk
Method
1. Place a strainer over a bowl and cover it with muslin cloth. Add the yogurt, tie the cloth and place a weight on top to drain the whey or excess water. Set aside in refrigerator for 6-8 hours to get hung yogurt.
2. Transfer into a bowl and whisk. Pass it through a sieve to get a smooth texture.
3. Add powdered sugar and mix well.
4. Add almonds, pistachios and saffron milk along with saffron strands and mix well.
5. Transfer into a serving bowl.
6. Serve chilled.
