SABUDANA CHAAT

Ingredients

1 cup sago (sabudana), soaked and drained
¼ cup roasted salted peanuts
2 medium potatoes, boiled, peeled and grated
1 tsp ginger-green chilli paste
½ tsp lemon juice
1 tbsp freshly chopped coriander leaves + for garnish
Salt to taste
Oil for deep frying
Sweetened yogurt as required
Green chutney for drizzling
Tata Sampann Tamarind And Date Chutney as required
Chaat masala for sprinkling
Sev for sprinkling

Method

1. In a mortar and pestle, add peanuts and coarsely crush them. Set aside.
2. In a large bowl, add sabudana, potatoes and crushed peanuts. Add ginger-green chilli paste, lemon juice, chopped coriander, salt, and mix well.
3. Take a generous portion of the mixture and shape it into a tikki.
4. Heat sufficient oil in a kadai, drop the prepared tikkis and deep fry till golden and brown. Drain on an absorbent paper.
5. For serving, place a sabudana tikki on a serving plate and crush it. Drizzle sweetened yogurt, green chutney and drizzle Tata Sampann Tamarind And Date Chutney.
6. Sprinkle chaat masala and sev. Garnish with chopped coriander and serve immediately.
