Recipe Description

Ingredients

  • 2 cups dried kidney beans or any preferred beans
  • 1 medium onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 green chili, chopped (optional)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

Step 1: Prepare the Beans

  • Soak the beans overnight in water to soften them.
  • Drain and rinse them before cooking.

Step 2: Cook the Beans

  • In a large pot, bring the beans to a boil with water. Lower the heat and let them simmer for 20–30 minutes or until soft and tender. Drain the water and set the beans aside.

Step 3: Prepare the Spicy Sauce

  • Heat vegetable oil in a large skillet over medium heat.
  • Add chopped onions, garlic, and ginger. Sauté until soft and golden brown, about 5–7 minutes.
  • Stir in the tomatoes and cook for another 5 minutes until they soften.
  • Add the cumin powder, coriander powder, turmeric powder, paprika, and chili powder. Stir well to combine.
  • Cook the spices for 2 minutes, letting the flavors meld together.

Step 4: Combine Beans and Sauce

  • Add the cooked beans to the sauce mixture and stir to coat the beans with the spices.
  • Add tomato paste, green chili (if using), and a little water to create a thick sauce. Let it simmer for 10–15 minutes to let the flavors combine.

Step 5: Final Touches

  • Season with salt and pepper to taste.
  • Garnish with fresh cilantro and serve hot.
