Ingredients

For the Filling:

Instructions

Step 1: Prepare the Dough

  • In a bowl, mix flour, salt, and oil until crumbly.
  • Gradually add water and knead into a firm dough. Cover and let rest for 20 minutes.

Step 2: Cook the Filling

  • Drain the soaked dal and boil it until soft but not mushy. Drain and set aside.
  • Heat oil in a pan, add cumin seeds, and let them crackle.
  • Add ginger-garlic paste and sauté until aromatic.
  • Mix in turmeric, red chili powder, garam masala, and salt.
  • Add the boiled dal and cook until well combined. Stir in chopped coriander and let cool.

Step 3: Assemble the Samosas

  • Divide the dough into 6 portions. Roll each into a thin circle and cut in half to make two semicircles.
  • Form a cone with each semicircle, sealing the edge with water.
  • Fill the cone with the prepared daal mixture and seal the open edge tightly.

Step 4: Fry the Samosas

  • Heat oil in a deep pan. Fry the samosas in batches over medium heat until golden brown.
  • Drain on paper towels and serve hot.

Smash up the avocado with a fork, leaving some pieces chunky, then add the lime juice and season to taste.

Heat the oil in a large, non-stick frying pan over a medium heat. Add the onion and cook for 2 mins, then stir in the sweet potato. Season and press the potato into the pan with the back of a wooden spoon. Cook for 10-15 mins, stirring occasionally, until the potato is softened and crisping at the edges.

Make two spaces in the pan, crack in the eggs and cook for 2-3 mins until the whites are just set and the yolks runny. Dollop on the avocado and drizzle with sriracha to serve.

Put a large heavy-based saucepan on a medium heat and add 1 tbsp olive oil. Add the bacon and fry for 10 mins until golden and crisp. Reduce the heat and add the onion, carrot, celery, garlic and rosemary then fry for 10 mins, stirring often, until the veg has softened. Increase the heat to medium-high, add the mince and cook stirring for 3-4 mins until the meat is browned all over.

Add the tinned tomatoes, chopped basil, oregano, bay leaves, tomato purée, stock cube, chilli, wine and cherry tomatoes. Stir with a wooden spoon, breaking up the plum tomatoes. Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce. Add the Parmesan, check the seasoning and stir.

When the Bolognese is nearly finished cook the spaghetti following pack instructions. Drain the spaghetti and stir into the Bolognese sauce. Serve with grated Parmesan the extra basil leaves and crusty bread, if you like.

Crispy Greek-style pie

1 Put the spinach into a large pan. Pour over a couple tbsp water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly chop the tomatoes and put into a bowl along with the spinach, feta and eggs. Mix well. Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and brush liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil. Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.

Heat the oil in a large flameproof casserole dish and stir-fry the mushrooms until they start to soften. Add the chicken legs and cook briefly on each side to colour them a little. Pour in the passata, crumble in the stock cube and stir in the olives. Season with black pepper – you shouldn’t need salt. Cover and simmer for 40 mins until the chicken is tender. Sprinkle with parsley and serve with pasta and a salad, or mash and green veg, if you like.
