Cinnamon flavoured peach puree served topped with vanilla ice cream
PEACH FLOATING ISLAND
Ingredients
20 canned peaches
16 tsps sugar
4 one-inch cinnamon stick
4 scoops of vanilla ice cream
Cocoa powder for garnishing
Method
1. Heat a non-stick pan.
2. For each portion grind 5 peaches to a smooth puree and transfer into the non-stick pan. Add 2 tbsps water and 4 tsps sugar and cook. Add one cinnamon stick, mix well and cook on medium heat till sugar melts.
3. Discard the cinnamon stick and transfer the peach mixture into a soup bowl. Place a scoop of vanilla ice cream over it, sprinkle cocoa powder on the ice cream scoop through a sieve and serve immediately.
