Masoor ki biryani:
Ingredients s for Gravy masala
Split red lentil 1 cup
Rice 2 cups
Oil ¼ cup
Onion slices 2 medium
Ginger & garlic paste 1 tbsp
Green chili paste 2 tbsp
Curry leaves 12 – 15
Salt as required
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder ` ½ tsp
Whole spice 1 tbsp
Ingredients for yogurt mix
Yogurt ½ cup
Yellow color few drops
Screw pine essence few drops
Star anise powder 1 tsp
Ingredients for Jhol
Coriander 3 tbsp
Mint 3 tbsp
Green chili small 3 – 4
Tomato slices 2 – 4
Method
Gravy bananay kay liye pan men oil garam ker kay piyaz ko brown ker len. Phir lehsan or adrak ka paste dal ker bhoon len. Phir curry patta hari mirchon ka paste or tamam masalay dal ker itna bhoon len kay tamam masalon ka paste ban jae phir ubli huee dal dal ker thora sa pani shamil ker.
Dahi banany kya liye ek bowl men dahi, zarda color, kevra or badiyan ka powde dal ker mix ker len.Jhol banay kay liye ek bowl men tomato slices, hara dhania, podina or hari mirch dal ker mix ker len.
Ab dal wali gravy per dahi dal ker jhol ka saman bicha den phir ublay huway chawal dal ker upper se oil or zarda color dal ker 155 se 20 minutes kay liye dum per chor den.
Chicken shami kabab:
Ingredients
Chicken boneless 1 cup
Split Bengal gram boiled 1 cup
Ginger & garlic paste 1 tbsp
Red chili whole 4 – 5
All spice 1 tsp
Salt as required
Turmeric powder ½ tsp
Coriander chopped 1 tbsp
Mint chopped 1 tbsp
Egg 3
Oil for garnish
Method
Chicken ko ubal ker resha ker len phir daal ko ubal ker pees len phir ek mixing bowl men chicken, daal or tamam masaly dal ker mix ker len or kabab ki shakal de ker 10 se 15 minutes kay liye fridge men rakh den.
Phir karahi men oil garam ker kay kabab ko anday men dip ker kay fry ker len jab kabab golden hojae to nikal len.
Aalu gobhi kay parathay:
Ingredients for Filling
Potato boiled 1 cup
Cauliflower boiled 1 cup
Oil 2 tbsp
Onion chopped 1 medium
Salt as required
Red chili powder 1 tsp
Turmeric powder ½ tsp
Cumin 1 tsp
Coriander crushed 1 tsp
Coriander chopped 1 tbsp
Green chili big chopped 1 tbsp
Lemon juice 2 tbsp
ingredients for paratha dough
Fine flour 1 cup
Salt as required
Oil 1 tbsp
Water as required
Method
Ek pan men oil garam ker kay piyaz ko sauté ker len phir haldi, lal mirch, namak, zeera or kuta huwa dhania dal ker achi tarhan bhoon len phir aloo or gobhi ka bhurta dal ker hara dhania, hari mirch or lemon ka juice dal ker achi tarhan mix kare or 2 se 3 minutes tak paka ker cholha band ker den ro phir bhurtay ko plate men nikal ker thanda ker len.
Aata gondh nay kay liye ek mixing bowl men aata, oil or namak dal ker pani kay sath goondh len phir atay ko 10 minutes ka rest de ker pairay bana len.
Phir ek pairay ko bail ker aloo or gobhi ki filling bicha ker dosra paira bail ker us per laga den or kinaron ko fold ker len.
Ab tawa garam ker kay parathay ko dhimi anch per dono janib se thora thora oil ya ghee laga ker fry ker len.
Zafrani raita:
Ingredients
Yogurt 1 cup
Salt as required
Cumin crushed / roasted 1 tsp
Saffron essence few drops
Method
Ek mixing bowl men dahi or tamam ajza dal ker mix ker len.
