Mango Chicken:
INGREDIENTS
Yellow curry paste 2 tbsp
Turmeric 1 tsp
Chicken breasts, cut in strips ½ kg
Mangoes chopped 3
Capsicum, deseeded and sliced 1
Onion, cut into wedges 1
Grated ginger 1 tbsp
Garlic, crushed 3cloves
Oil 1 tbsp
Coconut cream 200ml
Brown sugar 1 tbsp
Green onions, sliced 2
Coriander leaves 2/3 cup
Fresh long red chili, sliced 1
Lemon wedges to serve
Steamed rice to serve
METHOD
Combine the curry paste and turmeric. Add the chicken, season and toss well to combine. Heat oil. Add onion, ginger, garlic, capsicum and chicken and cook until golden brown. Add blended mango, little water and add coconut cream and cook until the sauce thickens slightly. Stir in the remaining mango along with the sugar. Serve chicken sprinkled with green onions, coriander, chili, lemon wedges and steamed rice.
Mango Halwa:
Ingredients:
Mango pulp, strained 4 cups
rice flour or cornflour or flour 1 cup/ 3/4 cup
Water 1 cup
Sugar 1 ½ cups
Clarified butter 4 tbsp
Cardamom powder 1 tsp
Method:
Heat 2 tbspclarified butter and add the mango pulp. Roast for few minutes and add water in either flour or rice flour or cornflour. Mix it slowly. Stir continuously for 10-12 minutes, add the remaining clarified butter, sugar and cardamom powder. When the halwa starts to leave the sides, pour into an oiled tray and let it cool down for 2 to 3 hours. Cut into desired shapes and enjoy.
