At MIFUNE in NYC, you can make your own sushi. Diners scrape meat off of a tuna rib with a seashell, then craft their own sushi roll. It’s called maguro nakaochi, which translates to eating tuna straight from the bone. The entire tuna rib weighs around five pounds and serves up to six people.
