Kashmiri kabab curry:
Ingredients for kabab
Mince beef ½ kg
Fennel ground 1 ½ tsp
Ginger powder 1 tsp
Chili powder 1- ½ tsp
Allspice ½ tsp
Salt 1 tsp
Oil 1 tbsp
Egg 1
Bread 1 slice soaked
Ingredients for curry
Oil ½ cup
Sambal oleak 1tbsp
Coconut milk ½ cup
Cinnamon 1 stick
Cloves 4
Tomatoes 2 blended
Tomatoes puree 2 tbsp
Chili powder 2 tsp
Salt 1 tsp
Brown onion 3 tbsp crushed
Ginger garlic 1 tsp heaped
Green chilies 4 chopped
Yogurt ½ cup
Allspice ½ tsp
Parathas to serve
Coriander as required

Method for kabab
Mix all the ingredients in chopper and grind well, make long crocket size kababs, keep aside.
Method
Heat oil add cloves and cinnamon, fry, add ginger garlic, blended tomatoes, tomato puree and seasonings, add in yogurt and brown onion, add 1 cup water, then add kababs, cover and cook till done, lastly add allspice and chopped hara masala.
Achari fried wings:
Ingredients
Wings cut into 2 ½ kg
Ginger garlic paste 1 tbsp
Achar gosht masala 3 tbsp
Yogurt 3 tbsp
Lemon juice 2 tbsp
Corn flour 4 tbsp
Egg 1
Sambal oleak 1tbsp
Chili garlic sauce 1tbsp
Rice flour 2 tbsp
Chat masala to sprinkle
Oil for frying
Method
Marinate wings with all the given ingredients for 2 hours, deep fry until golden and tender, serve sprinkled with lemon juice and chat masala.
Orange pineapple trifle:
Ingredients
Biscuits whole 8
Pineapple pieces 1 can drained
Caramel pudding mix 1 packet
Cream 1 cup whipped
Orange or pineapple jelly 1 packet
Orange essence ¼ tsp
Milk 2 cup
Pineapple syrup ½ cup
Coconut milk powder 2tbsp
Method
In a pan mix milk, caramel pudding mixture and cook stirring till thick, remove, add syrup, fold in pineapple cubes, and keep aside.
To assemble
In shot glasses put a biscuits, top with dissolved orange jelly, top with pudding mixture, leave it until set, decorate top with whipped cream, serve chilled.
